It depends on the dish. For me it’s really a matter of personal preference. I’m not a fan of the texture when biting down on the peppercorns. I would have included chilies in this, but it would have overpowered the weak infused oil. I’ll have to give it another go!

No worries you’ll have more cukes to harvest and take with you when you come over Saturday to test drive beverages.
Question- would you ever use the actual peppercorns or red chillies in the dish? I notice in sichuan food that they tend to pour the infused chilly oil with the chillies on top?

I was totally kicking myself for not having mushrooms on hand, but I’ve found myself using them less and less, anyhow. I definitely used to finely chop first, but I found it much easier to manage this way. The draining goes much easier.

better yet, the bacon wrapped dog covered in chili, cheese and onions…mmm…now i want one!

you forgot the mushrooms…as for the napa, i dunno if it’s easier, but i usually fine chop first and then toss with salt, then i do the squeezing/draining over a sieve…

i’m still using the turkey, gotta try and keep the treif down in this house ya know? (as i’m sitting here cooking pig’s feet…hehe)

haven’t gotten very far, but it isn’t much we already don’t know. the slavery issue is shocking, but in terms of food quality, if you’ve read anything in the past ten years about agribusiness, you already got the gist. will give u an update later.
