Roasted Chicken (yum)

There was an episode of The Barefoot Contessa a few years ago (when I had a tv, sad face) where Ina Garten went to her local butcher in the Hamptons, picked up a (very) fresh chicken, went home and mixed up lots of chopped garlic, dijon mustard, salt, pepper and god knows what else, and then slathered the mixture on the chicken and threw that baby in the oven.  I love run-ons.

Anywho, all that stuck from the show for me was what I’ve listed above.  Plus some extra virgin olive oil.  Duh.  A squeeze of a lemon puts it over the top.

There’s nothing like a whole roasted chicken to work over for the remainder of the week.  I start with the breasts and day by day work my way to the more juicy, tender parts.  Mmm…  I sound like a pervert.
